What’s Cooking – Target’s Archer Farms Chicken @ArcherReviews @ArcherFarms

Shopping at my Super Target this past weekend found an awesome new chicken dish I have not had the opportunity to try before.

Pre-packaged and prepared, the Archer Farms Prosciutto, Red Pepper, Spinach and Swiss Cheese Stuffed Chicken Breast is A-MA-ZING!!!

First of all, simple to prepare is always good.  Turn on the oven, heat to 400 and place chicken in the oven in a baking dish.  Secondly, this dish doesn’t kill your calorie intake for the day.  Only 190 calories per 5 oz. serving.

Packaging consists of 2 stuffed breast, approximately 5 oz. each.  Elegantly prepared, the dish looks like it could be served at a three star Michelin restaurant.

Tasty, rich, healthy, interesting blend of ingredients.  This chicken dish is a winner, I can’t wait to try another.  Easily worth the $8.32 cost!

What’s Cooking ~ Potato Casserole

I don’t know if you would consider this a modified scalloped potato dish or not, I made it from scratch by just throwing some things together and YUM!

I will call it…

Potato CasserolePotato Casserole

2 small yellow potatoes cut thin with peel left on

sliced mini-portabello mushrooms

sliced onion

pepper

red pepper flakes

Nature’s Seasoning seasoned blend

2% milk

2% sharp cheddar cheese

To cook:

Layer the potatoes, mushrooms and onions.

Season with pepper, Nature’s Seasoning, red pepper flakes.

Add milk until the potatoes and mushrooms are covered

Bake at 425 for 30 minutes

Bake 10 more minutes covered with cheeses
